Avocado pesto pasta
Put a healthful twist on a traditional pesto pasta recipe! This creamy avocado pesto is indulgent without being overly rich, thanks to heart-healthy avocado and a touch of olive oil.

Ingredients
Avocado pesto pasta
- 375 gram spaghetti
- 1 cup firmly packed basil leaves, plus extra, to serve
- 1 avocado, seeded, peeled, chopped
- 1/2 cup finely grated parmesan cheese
- 1/2 cup cream
- 2 tablespoon slivered almonds, toasted, plus extra to serve
- 1/2 juiced lemon
- 1 tablespoon olive oil
- 2 cloves garlic, chopped
Method
Avocado pesto pasta

1Cook spaghetti in a large saucepan of boiling salted water following packet instructions, until al dente. Drain well. Return to pan.

2Combine all remaining ingredients in a food processor. Pulse until smooth. Season to taste.

3Toss avocado pesto through hot pasta. Serve topped with extra almonds and basil leaves.
Notes
If liked, add some shredded cooked chicken or semi sun-dried tomatoes.
