Ingredients
Baked fruit medley
- 1/4 cup (60ml) maple syrup
- 30 gram low-fat butter alternative, such as pro-activ
- 1 tablespoon brown sugar
- 1 teaspoon ground cinnamon
- 3 green apples, quartered (retain skin and core)
- 3 pears, quartered (retain skin and core)
- 200 gram packet dried figs (see tip)
- 3 stalks rhubarb, trimmed and sliced
- low-fat ice-cream, to serve
Method
Baked fruit medley

1Preheat oven to 180°C.

2Combine maple syrup, butter alternative, sugar and cinnamon in a small saucepan. Heat gently, until melted and well combined.

3Arrange apples, pears and figs in a baking dish. Toss maple syrup mixture through fruit.

4Bake for 25-30 minutes. Add rhubarb halfway through cooking and toss well. Serve warm with low-fat ice-cream.
Notes
If desired, use softer "dessert figs" or fresh fig If using fresh, add during last 10 minutes of cooking.
