Broccoli and three-cheese gluten-free pizza
Yes, you read that right – broccoli on a pizza and it’s amazing! Nici Wickes' gluten-free pizza recipe makes it a cinch to add more of this super vege to your diet (albeit with three kinds of cheese!)

Ingredients
Gluten-free pizza base
- 450 gram gluten-free flour, plus extra for dusting
- 1/4 teaspoon baking soda
- 1 teaspoon salt
- 2 teaspoon sugar
- 1 egg, lightly beaten
- 80 millilitre extra virgin olive oil, plus extra for greasing
- 160毫升温水
Broccoli three-cheese pizza
- 1 head broccoli, cut into florets and stem cubed
- zest and juice of 1 lemon
- 1/2 cup mozzarella, grated
- 50 gram Parmesan, grated
- 100 gram feta, crumbled
- 1/2 cup sour cream
- 1/4 cup white wine
- 1/4 cup cream
- 1/4 teaspoon sea salt
- freshly ground black pepper
- 1 quantity gluten-free pizza dough (recipe above)

1Grease 2 oven trays and line with baking paper.

2Sift the gluten-free flour, baking soda, salt and sugar into a large bowl. Pour in the egg, olive oil and water, then mix to combine.

3Divide the dough into four portions and roughly knead each into a ball.

4Working with each portion of dough, use floured hands to press and flatten, then roll out to your desired shape and thickness – I aim for an oblong shape. Transfer to a lined tray, ready for toppings. Makes 3-4 medium bases.

5Preheat oven to 220-250°C.

6Steam the broccoli until just cooked. Put in a food processor and pulse briefly to roughly chop. Mix in the lemon zest, juice and cheeses.

7In a bowl, whisk together the sour cream, wine, cream and seasonings. Spoon this sauce over the pizza base and top with the broccoli/cheese mix.

8Bake for 15 minutes until the broccoli is cooked and even charred in some places. Serve immediately.
