Ingredients
Caramelised onion & goat's cheese quiches
- 1 tablespoon olive oil
- 20 gram (¾ ounce) butter
- 2 large_piece (400g) halved and thinly sliced onions
- 1 teaspoon salt
- 1 teaspoon brown sugar
- 2 teaspoon lemon thyme leaves
- 2 eggs
- 1 tablespoon milk
- 12 -hole (2-tablespoon/40ml) flat-based patty pan.
- 7 centimetre (3-inch) cutter
- 60 gram (2 ounces) crumbled soft goat's cheese.
Method
Caramelised onion & goat's cheese quiches

1Preheat oven to 180°C/350°F. Heat olive oil and butter in a medium frying pan over medium-high heat. Cook onions with salt and brown sugar, stirring for 5 minutes or until onion starts to collapse.

2Reduce heat to medium; cook, covered, for a further 10 minutes, stirring occasionally or until caramelised. Remove from heat; stir in lemon thyme leaves. Whisk eggs with milk in a medium jug; season. Grease a 12-hole (2-tablespoon/40ml) flat-based patty pan. Using a 7cm (3-inch) cutter, cut 12 rounds from 2 sheets of shortcrust pastry; press rounds into pan holes.

3Spoon onion mixture into pastry cases, top with egg mixture, then crumbled soft goat's cheese. Bake 25 minutes or until quiches are set and pastry is browned lightly. Serve warm.
Notes
You can use fetta instead of goat's cheese, if you prefer.
