Chocolate courgette fudge cake
Chocolate and courgette, who would've thought? This tender courgette fudge cake recipe has a good chocolate flavour, there's no hint of the courgettes. They just help keep the cake moist, while adding some nutritional goodness

Ingredients
Chocolate courgette fudge cake
- 3 cup grated courgette (approximately 2 large or 3 medium courgettes)
- 100 gram butter
- 1 1/4 cup sugar
- 1 cup apple puree or unsweetened apple sauce
- 2 teaspoon instant coffee powder or granules
- 2 teaspoon vanilla essence
- 2 eggs
- 1/2 cup sour cream, buttermilk or yoghurt
- 2 1/2 cup plain flour
- 3/4 cup cocoa
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup chocolate chips
Chocolate glaze
- 3 tablespoon butter
- 1 tablespoon liquid glucose

Method
Chocolate courgette fudge cake

1Preheat the oven to 180°C.

2Grate the courgettes and set aside. Grease and line the base of a 24-26cm cake tin.

3In a bowl, mixer or processor, cream the butter and sugar, then add the apple puree or sauce, instant coffee powder or granules, vanilla essence and eggs and mix lightly. Add the sour cream, buttermilk or yoghurt and mix.

4In a large bowl, sift the flour, cocoa, baking soda, baking powder and salt. Add the grated courgette, then fold the liquid into the dry ingredients. Stir in the chocolate chips, pour into the prepared tin and level the top. The mixture may seem dry at this point but courgettes are around 90 percent moisture so it will become moist as it cooks.

5Bake in the preheated oven for an hour or until a skewer inserted in the middle comes out clean. Cool in the tin before removing.

6Heat the butter and glucose in a saucepan or microwave, then remove from the heat and stir in the chocolate and vanilla, stirring until completely smooth. Cool slightly before pouring onto the cake. The icing will set quickly once spread.
