Ingredients
Chocolate drizzeled honeycomb
- 1 1/3 cup raw caster sugar (raw caster bumps up the caramel flavour)
- 2 tablespoon golden syrup
- 2 tablespoon honey
- 2 tablespoon water
- 3 tablespoon bicarb soda
- 100 gram milk chocolate
- 100 gram 70% dark chocolate (mixing milk and dark chocolate makes it a little richer without being overpowering)
Method
Chocolate drizzeled honeycomb
-
1Line cake tin with baking paper.
-
2Place sugar, golden syrup, honey and water in saucepan over medium heat. Bring mixture to the boil for 10 minutes or until begining to darken in colour, stirring occasionally. Turn heat off.
-
3Working quickly sieve bicarb into mixture and whisk well to combine.
-
4Pour into lined tin and set aside for 2 hours to cool and harden. When honeycomb has set, remove baking paper and break into bite-size pieces. Place onto clean sheet of baking paper.
-
5Break chocolate and place in jug or bowl. Pop in the microwave on medium heat for 1 minutes. Stir and continue to heat in 30 second intervals until melted, stirring in between.
-
6Drizzle generous spoonfuls of melted chocolate over honeycomb pieces and allow to set.
-
7Serve with ice-cream for an extra indulgent dessert.
Notes
The easiest way to clean the saucepan and utensils after making the honeycomb is to fill the pan with water and place on the heat for about 5 minutes.
