Classic Kiwi whitebait fritters
Perfect a Kiwi classic with this recipe for whitebait fritters. Serve with a squeeze of lemon juice and thick slices of white bread smothered in plenty of butter

Ingredients
- 1/2 cup flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 egg, separated
- 1/2 cup milk
- 1/2 cup whitebait
- canola or vegetable oil for frying
- lemon wedges, Worcestershire sauce, bread to serve
Method

1Sift flour, baking powder and salt into a large bowl.

2In another bowl, separate the egg, then mix the egg yolk and milk together. Add to flour mixture, combining until smooth.

3In a separate bowl, whisk egg white until stiff peaks form, then fold into mixture. Drain whitebait well and add to mixture.

4Heat oil in a frying pan. Add dollops of fritter mixture and cook until golden on both sides.

5Allow fritters to drain on a paper towel, then serve with lemon wedges, sauce, bread and butter, if desired.
