Corn and bacon fritters
Delicious and easy to make corn and bacon fritters can be made ahead of time then reheated and served with tomato relish and salad. They also make the perfect weekend brunch.

Ingredients
Corn and bacon fritters
- 300 gram can creamed corn
- 3/4 cup sifted self-raising flour
- 2 rashers, chopped rindless bacon
- 1/4 cup parsley, finely chopped
- 2 finely sliced, green onions plus extra to garnish
- 1 lightly beaten egg
- 1 tablespoon olive oil
- roasted baby tomatoes, mixed leaves, to serve
Method
Corn and bacon fritters

1In a large bowl combine corn, flour, bacon, parsley, green onion and egg. Season to taste.

2Heat a non-stick frying pan on medium heat. Brush with oil. Place heaped tablespoons of mixture into pan in 3 batches and flatten slightly with a spatula.

3Cook 1-2 minutes each side, until fritters are lightly browned and Cooked through.

4Transfer cooked fritters to a plate. Cover with foil to keep warm while cooking the remaining fritters. Serve with tomatoes and salad leaves.
