- 1 loaf white unsliced bread
- 300 millilitre cream
- 2 eggs
- 25 gram butter
- 3/4 cup passionfruit or lemon curd
- 1/2 cup mixed berries
- icingsugar for dusting
Method

1Slice crusts from bread and cut into thick fingers.

2Whisk cream and eggs and pour into a shallow dish.

3Sit bread fingers in cream mixture and allow to soak for a minute, then turn and leave a further minute.

4Heat butter in a large frying pan over a medium heat and cook fingers in batches until golden on each side.

5Serve fingers with a dollop of curd and scatter over berries. Dust with icing sugar.
