Ingredients
Fruit and nut fudge
- 1 cup whole nuts, roasted
- 1/2 cup raisins
- 2 395 gram cans sweetened condensed milk
- 2 cup brown sugar
- 250 gram butter, chopped
- 100 millilitre glucose syrup
- 1/4 cup golden syrup
- 1 teaspoon rum or vanilla essence
- 150 gram dark chocolate, melted
Method
Fruit and nut fudge

1Lightly grease a 20 x 30cm deep lamington pan and line with baking paper. Sprinkle nuts and raisins evenly over base.

2In a large heavy-based saucepan, combine condensed milk, sugar, butter, syrups and essence. Stir over low heat until sugar dissolves. Increase heat to medium and bring to boil. Cook, stirring constantly, for 12-15 minutes, until mixture turns a dark caramel colour.

3Pour into tray, smoothing top. Drizzle chocolate over surface. Chill overnight until firm. Cut into 3cm squares. Store in an airtight container in the fridge.
Notes
Glucose syrup is available from the baking aisle of most supermarkets and at health food shops.
