Ice-cream tacos with strawberry, tequila and lime salsa
- 1 cup plain flour
- 1 teaspoon baking powder
- 1 pinch salt
- 1 1/2 tablespoon icing sugar
- 15 gram cold butter
- 1 vanilla bean, seeds removed, pod reserved
- 4 1/2 cup boiling water
- 1/3 cup caster sugar
- 1 tablespoon lime juice
- 1/3 cup water
- 2 tablespoon tequila
- 1茶匙柠檬zest
- 250 gram strawberries, hulled and diced
- 1.2 litre vanilla ice-cream

1Place flour, baking powder, salt, icing sugar, butter and vanilla seeds food processor and pulse until butter is incorporated. With motor running, pour water down spout until dough forms a ball. Remove from processor and knead for a few minutes until smooth and elastic (if dough is too wet, sprinkle with a little extra flour). Cover with cling wrap and rest for 30 mins.

2Place sugar, lime juice, water, tequila and vanilla pod in small saucepan over medium-high heat. Bring to a simmer for 5 mins, remove from heat and allow to cool completely. Stir in strawberries.

3Heat frying pan over medium heat. Divide dough into 12 even balls and roll 1 between 2 pieces of baking paper to 13cm in diameter. Carefully peel off baking paper and cook for 45 60 seconds on on side until golden. Turn and cook for 30 to 45 secs. Repeat with remaining dough.

4To serve, place a scoop of ice-cream in a cooled tortilla and spoon over strawberry, lime and tequila salsa. Serve immediately yum!
