Iced avocado soup with cucumber and coriander

When the weather is hot, chilled soups are the way to go. This fresh and zesty recipe for avocado soup uses cucumber and lime for a summertime flavour.

Ingredients

Iced avocado soup with cucumber and coriander
  • 4 cup water
  • 3 ripe avocados, stone removed, peeled, coarsely chopped
  • 1 lebanese cucumber, seeds removed, partly peeled, coarsely chopped
  • 1 lime, zest finely grated and juiced
  • 1/2 cup chopped parsley
  • 2 green chillies, seeds removed, sliced
  • 1 clove garlic, finely chopped
  • 1/4 cup chopped coriander
  • lime wedges, to serve

Method

Iced avocado soup with cucumber and coriander

    Combine all ingredients, except coriander and lime wedges, in a food processor or blender. Process until smooth. Season to taste.

    Chill for least 2 hours. Serve sprinkled with coriander. Accompany with lime wedges.

Notes

Baby spinach could be used in place of parsley. Try finishing this with a little cream.
