Mascarpone honey and lemon baked cheesecake

Ingredients

  • 80 gram butter
  • 100 gram icing sugar
  • 150 gram flour
  • 1 teaspoon vanilla
  • 500 gram cream cheese
  • 200 gram mascarpone
  • 1/2 cup honey
  • 1/2 cup caster sugar
  • 1/4 cup lemon juice
  • 2 tablespoon lemon zest
  • 3 eggs
  • 1/2 cup cream
  • 2 lemons, thinly sliced
  • 1/4 cup honey

Method

    Preheat oven to 160ºC and line the base of a 21cm springform cake tin.

    In the food processor combine butter, icing sugar, flour and vanilla. Blend well.

    Press mixture into the base of tin, then bake for 10-12 minutes, until pale golden.

    In a clean food processor blend the cream cheese, mascarpone, honey, caster sugar, lemon juice and zest, eggs and cream until smooth (about 3-4 minutes).

    Pour cream cheese mix over base and bake for 1 hour, or until set in the centre. Heat lemon slices and honey until syrupy and spoon over the cheesecake just before serving.
