Mascarpone honey and lemon baked cheesecake
Whether you’re having a girls’ night or a dinner party, this baked lemon cheesecake recipe is the perfect crowd-pleaser

Ingredients
- 80 gram butter
- 100 gram icing sugar
- 150 gram flour
- 1 teaspoon vanilla
- 500 gram cream cheese
- 200 gram mascarpone
- 1/2 cup honey
- 1/2 cup caster sugar
- 1/4 cup lemon juice
- 2 tablespoon lemon zest
- 3 eggs
- 1/2 cup cream
- 2 lemons, thinly sliced
- 1/4 cup honey
Method

1Preheat oven to 160ºC and line the base of a 21cm springform cake tin.

2In the food processor combine butter, icing sugar, flour and vanilla. Blend well.

3Press mixture into the base of tin, then bake for 10-12 minutes, until pale golden.

4In a clean food processor blend the cream cheese, mascarpone, honey, caster sugar, lemon juice and zest, eggs and cream until smooth (about 3-4 minutes).

5Pour cream cheese mix over base and bake for 1 hour, or until set in the centre. Heat lemon slices and honey until syrupy and spoon over the cheesecake just before serving.
