Ingredients
Potato chocolate cake
- 125 gram butter
- 2/3 cup caster sugar
- 2 eggs
- 1/2 cup cold mashed potato
- 1 1/4 cup self-raising flour
- 1/3 cup cocoa
- 1/3 cup milk
Chocolate frosting
- 90 gram butter
- 1 1/2 cup icing sugar
- 2 tablespoon cocoa
- 2 tablespoon milk, approximately
Method

1Grease a 20cm ring pan, line base with paper; grease paper.

2Cream butter and sugar in small bowl with electric mixer until light and fluffy, beat in eggs, one at a time; beat until combined. Stir in potato with half the sifted flour and cocoa and half the milk, then stir in remaining flour, cocoa and milk.

3Spread mixture into prepared pan. Bake in moderate oven for about 40 minutes. Stand 5 minutes before turning on to wire rack to cool.

4To make chocolate frosting, beat butter in small bowl with electric mixer until creamy. Gradually beat in sifted icing sugar and cocoa and milk, beat until frosting is spreadable.

5Spread cold cake with frosting.
Notes
You will need about 2 raw potatoes (185g) for this recipe. Keeping time: 2 days.
