Ingredients

Ricotta and honey pikelets
  • 500 gram ricotta
  • 3 eggs, lightly beaten
  • 1/2 cup (75g) flour
  • 1/4 cup (35g) currants
  • 2 tablespoon honey, plus extra, to serve
  • 1 teaspoon vanilla extract
  • 2 tablespoon olive oil
  • icing sugar, for dusting
  • sliced banana (optional), to serve

Method

Ricotta and honey pikelets

    In a bowl, combine ricotta, eggs, flour, currants, honey and vanilla.

    Heat oil in a frying pan on medium. Place tablespoon measures of batter into pan, flattening lightly with a spatula. Cook in batches for 1-2 minutes each side, until cooked through and golden. Drain on paper towel.

    Dust with icing sugar. Serve topped with extra honey and sliced banana, if desired.
