Ingredients
Ricotta and honey pikelets
- 500 gram ricotta
- 3 eggs, lightly beaten
- 1/2 cup (75g) flour
- 1/4 cup (35g) currants
- 2 tablespoon honey, plus extra, to serve
- 1 teaspoon vanilla extract
- 2 tablespoon olive oil
- icing sugar, for dusting
- sliced banana (optional), to serve
Method
Ricotta and honey pikelets

1In a bowl, combine ricotta, eggs, flour, currants, honey and vanilla.

2Heat oil in a frying pan on medium. Place tablespoon measures of batter into pan, flattening lightly with a spatula. Cook in batches for 1-2 minutes each side, until cooked through and golden. Drain on paper towel.

3Dust with icing sugar. Serve topped with extra honey and sliced banana, if desired.
