Sweet peach and thyme pizza

Ingredients
Pizza dough
- 1 1/4 cup (185g) plain (all-purpose) flour
- 1 tablespoon caster (superfine) sugar
- 1 teaspoon dried instant yeast
- pinch salt
- 1/2 cup (125ml) warm water
- 1 tablespoon olive oil
Sweet peach and thyme pizza
- 1 tablespoon fresh thyme sprigs
- 2 large_piece yellow peaches (440g)
- 2 tablespoon demerara sugar
Method
Sweet peach and thyme pizza

1To make pizza dough, combine flour, caster sugar, yeast and salt in a large bowl. Stir in the water and olive oil. Turn dough onto a lightly floured surface; knead lightly (adding a little more flour if necessary) until dough forms a smooth, soft ball. Place in a lightly oiled clean bowl; cover with a tea towel. Stand dough in a warm, draft-free place for about 1 hour or until doubled in size.

2Preheat oven to 240°C. Grease large oven tray.

3Punch air out of dough. Divide dough equally in half. Roll each half thinly on a floured surface into a 30cm oval. Place on trays; sprinkle over half the thyme.

4Halve peaches; discard seeds. Thinly slice peaches; arrange on dough. Sprinkle over demerara sugar. Bake about 10 minutes until golden and base is crisp. Serve immediately sprinkled with remaining thyme.
Notes
Choose freestone peaches as it will be easier to remove the seeds.
