Thai basil chicken noodle stir-fry

Ingredients

Thai basil chicken noodle stir-fry
  • 4 chicken thigh fillets, sliced
  • 185 gram thai basil and mild chilli stir-fry paste
  • 400 gram thick hokkien noodles, soaked in hot water
  • 1 tablespoon sesame oil
  • 1 small head broccoli, cut into florets
  • 220 gram can water chestnuts, drained, quartered
  • 1/4 cup shredded thai basil
  • 1 tablespoon toasted sesame seeds

Method

    In a bowl, combine chicken and paste. Marinate in fridge 15 minutes. Heat noodles according to packet directions. Drain and keep warm.

    Heat oil in a wok or frying pan on high. Stir-fry chicken in batches for 3-5 minutes, until browned.

    Return chicken to pan with broccoli. Stir-fry 3-5 minutes, until chicken is cooked through and broccoli is tender.

    Add noodles and water chestnuts. Stir-fry for another 2-3 minutes. Toss through basil and sesame seeds. Serve.
