Ingredients
Tomato, goat's cheese and thyme quiches
- 4 sheets frozen shortcrust pastry
- 18 cherry tomatoes, halved
- 120 gram crumbled goat's cheese
- 2 eggs
- 1/2 cup cream
- 2 tablespoon parmesan, grated
- 2 tablespoon thyme leaves, plus extra
Method
Tomato, goat's cheese and thyme quiches

1Preheat oven to 180°C. Lightly grease 3 mini muffin trays.

2Cut 36 circles from pastry using a 4cm round pastry cutter. Ease pastry into recesses. Place half a cherry tomato and a little goat's cheese in each.

3In a jug, whisk eggs, cream and parmesan together. Season to taste. Pour evenly among cases. Sprinkle with thyme.

4Bake 12-15 minutes, until custard puffs and pastry is golden.
