Ingredients

Tomato, goat's cheese and thyme quiches
  • 4 sheets frozen shortcrust pastry
  • 18 cherry tomatoes, halved
  • 120 gram crumbled goat's cheese
  • 2 eggs
  • 1/2 cup cream
  • 2 tablespoon parmesan, grated
  • 2 tablespoon thyme leaves, plus extra

Method

    Preheat oven to 180°C. Lightly grease 3 mini muffin trays.

    Cut 36 circles from pastry using a 4cm round pastry cutter. Ease pastry into recesses. Place half a cherry tomato and a little goat's cheese in each.

    In a jug, whisk eggs, cream and parmesan together. Season to taste. Pour evenly among cases. Sprinkle with thyme.

    Bake 12-15 minutes, until custard puffs and pastry is golden.
