Stash it: Recipes to make ahead

There are some days when there is too much else going on to get to the kitchen, and whipping up a meal from scratch is the last thing on our minds.

That's when having a freezer stocked with healthy, nourishing meals comes in handy.
These are recipes that are perfect for making ahead; some can keep in the freezer for up to three months, and it means that one afternoon's worth of cooking can set you up for the coming weeks.
We've also put together a handy guide onhow to freeze food, so you can make sure you're maximising your food prep.

Soups

Soups are a great option for making ahead, and thischai roasted pumpkin soup with honey walnutsis no exception. Divide the soup, once cool, among ziploc bags to make individual portions; simply defrost for a few hours before reheating in the microwave.

Burger patties

Save stacks of time by making up burger patties and storing in the freezer. This is a double-whammy time saver; burgers are a super simple dinner option, and with the hard work already done, you'll have a quick, tasty meal in no time. Try theselamb, feta and tzatziki burgers.

Pies

Pies are another great make-ahead meal; once you've cooked up the filling, you can freeze for up to three months. Once these individualeggplant and mushroom pot pieshave been defrosted, simply add the pastry topping and bake until piping hot.
