Aioli

This delicious garlic mayonnaise is so simple to make. Serve it alongside fish, chicken, on sandwiches or to accompany a bowl of hot chips.

Ingredients

  • 2 egg yolks
  • 2 garlic cloves, crushed
  • 1 teaspoon dijon mustard
  • 2 teaspoon white wine, vinegar or lemon juice
  • 1 cup (250ml) olive oil

Method

    Place egg yolks, garlic, mustard and half of vinegar in a food processor; blend for a few seconds.

    With motor running, gradually add oil in a thin steady stream, ensuring each addition is absorbed before adding more. Blend in remaining vinegar. Season, spoon into a serving bowl.
