Almond, macadamia and chocolate friands
- 1 1/4 cup icing sugar
- 3/4 cup plain flour
- 1杯杏仁粉
- 3/4 cup dark chocolate chips
- 1/2 cup chopped macadamia nuts
- 6 egg whites
- 185 gram butter, melted
Method
Almond, macadamia and chocolate friands

1Preheat oven to moderate, 180°C (160°C fan-forced). Lightly grease 8 recesses of a mini loaf pan.

2Sift icing sugar and flour together into a large bowl. Blend in almond meal, 1/2 chocolate chips and the macadamia nuts.

3In a small bowl whisk egg whites lightly with a fork until frothy, do not beat. Add to dry ingredients and mix lightly.

4Blend in butter, stirring until combined. Divide mixture among prepared recesses. Sprinkle each with remaining chocolate chips.

5Bake for 15-20 minutes until golden and cooked when tested with a skewer. Cool in pan for 5 minutes before turning onto a wire rack to cool completely.
Notes
Store in an airtight container for up to 3 days. Can be frozen. If liked, use other nut meal in place of almond.
