Almond marmalade slice
A delicious, buttery slice with a crumbly topping.

Ingredients
Almond marmalade slice
- 1 1/2 cup (150g) flaked almonds
- 1 cup self-raising flour
- 3/4 cup plain flour
- 2/3 cup caster sugar
- 170 gram butter, melted
- 2/3 cup orange marmalade
Method

1Grease a 19cm x 29cm slice pan and line base and sides with baking paper. Place 1 cup of the flaked almonds in a food processor and process until finely ground.

2Preheat oven to 200°C. Sift flours and sugar into a large bowl, stir in ground almonds and melted butter. Reserve one-third of the mixture. Press the remaining two-thirds of the mixture firmly over the base of prepared pan and bake for 12 minutes or until lightly browned. Remove from oven, cool.

3Reduce oven temperature to 180°C. Spread marmalade over cooled base. Stir remaining flaked almonds through reserved flour mixture then sprinkle mixture over marmalade layer.

4Return slice to oven and bake for 20-25 minutes until topping is lightly browned. Cool slice in pan before cutting.
Notes
Slice will keep for several days in an airtight container.
