Amaretti peaches

我t doesn't get much better than deliciously tender warm grilled peaches with a crusty, biscuit top - all served with fresh mascarpone.

Amaretti peaches
  • 2 800g cans peach halves, drained
  • 1 cup (100g) crushed amaretti biscuits or almond bread
  • 2 tablespoon almond meal (ground almonds)
  • 1 tablespoon cocoa powder
  • 2/3 cup (160ml) marsala
  • 30 gram butter, chopped
  • mascarpone, to serve

Method

Amaretti peaches

    Preheat oven to 180°C (160°C fan-forced). Arrange peaches, cut-side up, in an ovenproof dish. Combine biscuit crumbs, almond meal and cocoa in a bowl. Spoon liberally into each peach cavity.

    Drizzle marsala over peaches and dot with butter. Bake for 10-15 minutes, until hot and bubbly. Serve peaches warm with mascarpone.
