Ingredients
Apple and apricot bread puddings
- 4 medium_piece green apples, peeled and chopped
- 2/3 cup dried apricots, halved
- 1/2 cup water
- 1/3 cup caster sugar
- 1/2 tablespoon ground cinnamon
- 6 slice white or wholemeal bread
- 50 gram butter or margarine, melted
- cream, to serve
Method
Apple and apricot bread puddings

1Preheat oven to 180°C.

2In a large saucepan, combine apple, dried apricots and water. Bring to boil, then reduce heat and cook, covered, over a low heat for 15 minutes until fruit is softened. Remove from heat and stir in 2 tablespoons caster sugar. Combine the remaining caster sugar with cinnamon.

3Divide fruit mixture into 4 small ovenproof dishes.

4Cut the crusts from bread then cut into 2cm squares. Place bread squares into a bowl, add the melted butter and cinnamon sugar mixture and stir to coat bread evenly.

5Arrange bread mixture over fruit in dishes. Bake 20 minutes or until bread topping is golden. Serve puddings warm with cream.
Notes
Fruit can be cooked a day ahead, keep, covered, in the refrigerator. Make bread topping and bake puddings as required.
