Apple and cinnamon individual pizzas
Delight your taste buds with these mini-pizzas made with syrupy apples and served with cold ice-cream.

Ingredients
Topping
- 2 apples, peeled, cored, thinly sliced
- 1/3 cup brown sugar
- 1 teaspoon ground cinnamon
- 50 gram butter, melted
- icing sugar, to serve
- ice-cream, to serve
Pizza dough
- 1 cup warm water
- 8 gram sachet dried yeast
- 1 teaspoon caster sugar
- 2 1/2 cup plain flour
- 1 teaspoon salt
Method
Pizza dough

1In a small jug. combine water, yeast and sugar. Stand in warm place for 10 minutes until mixture is frothy.

2Sift flour and salt into a large bowl. Blend in yeast mixture to form a soft, sticky dough. Knead dough on a lightly floured surface for 5-10 minutes, until it is smooth and elastic.

3Place dough in a large, oiled bowl. Cover with plastic wrap. Leave to rise in a warm place for 1 hour, until dough doubles in size. Knock down dough to remove air. Knead into a smooth ball. Continue as required.
Apple and cinnamon pizzas

4Preheat oven to hot, 200°C (180°C fan-forced). Lightly grease 2 baking trays.

5Divide dough into 8 equal portions. Roll each portion on a lightly floured surface into 10cm rounds. Place on prepared trays.

6Arrange apple over bases. Sprinkle with combined sugar and cinnamon. Drizzle with butter.

7Bake 25-30 minutes, until golden. Dust with icing sugar and serve with ice-cream.
Notes
Tip: Leave the dough to rise in a warm place (not on a hotplate or in the oven), and make sure its not in a cold draught. An environment that is too hot will kill the yeast - and one that is too cold will retard the growth of the yeast.
