Apple and pear cupcakes

These deliciously fruity cupcakes are paired wonderfully with a passionfruit glaze, perfect to make with your kids on the weekend!

Ingredients

Apple and pear cupcakes
  • 125 gram butter, chopped, at room temperature
  • 2/3 cup caster sugar
  • 1 teaspoon vanilla essence
  • 2 eggs
  • 2 cup self-raising flour, sifted
  • 2/3 cup milk
  • 1 green apple, peeled, cored, chopped
  • 1 pear, peeled, cored, chopped
Passionfruit glace icing
  • 1 1/2 cup icing sugar mixture
  • 2 tablespoon passionfruit pulp
  • 1 teaspoon soft butter silver cashous, to decorate

Method

    Preheat oven to moderate, 180°C Line a 12-hole muffin pan with paper patty cases.

    Using an electric beater, cream butter and sugar together until light and fluffy. Beat in vanilla.

    Add eggs one at a time, beating well after each addition. Fold in flour alternately with milk, beginning and ending with flour. Fold in fruit. Spoon mixture into paper cases until 2/3 full.

    Bake for 20-25 minutes, until cooked when tested. Cool in pan for 5 minutes. Transfer to a wire rack to cool completely.

    To make icing: In a medium heatproof bowl, combine icing sugar, passionfruit pulp and butter. Place over a saucepan of simmering water. Stir until combined and the mix is a spreadable consistency.

    Spread icing over cooled cakes. Top with cashous.

Notes

We used heart-shaped silver cashous, available from specialty stores and cake decorating shops. Serve warm as a dessert with thick cream or ice-cream.
