Apple and spice slice
Soft warm apple lies atop this gloriously moist spiced loaf, waiting to be spread with a dash of butter and a dollop of cream.

Ingredients
Apple and spice slice
- 125 gram butter, chopped, at room temperature
- 3/4 cup brown sugar
- 1 teaspoon vanilla essence
- 2 eggs
- 2 cup self-raising flour
- 1 teaspoon mixed spice
- 3/4 cup sour cream
- 2 tablespoon milk
- 2 apples, peeled,cored, thinly sliced
- 1 tablespoon caster sugar
- 1/2 teaspoon ground cinnamon
- thick cream, to serve
Method

1Preheat oven to moderate, 180°C (160° fan-forced). Lightly grease and line an 18x28cm slice pan.

2In a large bowl, using an electric mixer, beat butter, sugar and vanilla together until pale and creamy.

3Add eggs one at a time, beating well after each addition, scraping down sides of bowl.

4Sift flour and spice together, then lightly fold through creamed mixture alternately with combined sour cream and milk, beginning and ending with flour.

5Spoon mixture into pan, smoothing top. Arrange apples over cake and sprinkle evenly with combined sugar and cinnamon.

6Bake 35-40 minutes, until cooked when tested. Cool in pan 5 minutes. Cut into squares to serve. Serve with cream, if desired.
Notes
Suitable to freeze. TIP: Use a light hand and don't over-mix when adding flour, as doing so will produce a tough, low-volume cake.
