Ingredients

Apple and spice slice
  • 125 gram butter, chopped, at room temperature
  • 3/4 cup brown sugar
  • 1 teaspoon vanilla essence
  • 2 eggs
  • 2 cup self-raising flour
  • 1 teaspoon mixed spice
  • 3/4 cup sour cream
  • 2 tablespoon milk
  • 2 apples, peeled,cored, thinly sliced
  • 1 tablespoon caster sugar
  • 1/2 teaspoon ground cinnamon
  • thick cream, to serve

Method

Apple and spice slice
  • 1
Preheat oven to moderate, 180°C (160° fan-forced). Lightly grease and line an 18x28cm slice pan.
  • 2
In a large bowl, using an electric mixer, beat butter, sugar and vanilla together until pale and creamy.
  • 3
Add eggs one at a time, beating well after each addition, scraping down sides of bowl.
  • 4
Sift flour and spice together, then lightly fold through creamed mixture alternately with combined sour cream and milk, beginning and ending with flour.
  • 5
Spoon mixture into pan, smoothing top. Arrange apples over cake and sprinkle evenly with combined sugar and cinnamon.
  • 6
Bake 35-40 minutes, until cooked when tested. Cool in pan 5 minutes. Cut into squares to serve. Serve with cream, if desired.

Notes

Suitable to freeze. TIP: Use a light hand and don't over-mix when adding flour, as doing so will produce a tough, low-volume cake.
