Apple and strawberry teacake

Ingredients
Apple and strawberry teacake
- 1/3 cup caster sugar
- 3 eggs, at room temperature
- 1/2 cup reduced-fat milk
- 1/3 cup vegetable or light olive oil
- 2 red apples, peeled, cored, finely chopped
- 250 gram strawberries, chopped, plus extra, to serve
- 3/4 cup wholemeal self-raising flour
- 3/4 cup white self-raising flour
- 1 1/2 teaspoon ground cinnamon
Method

1Preheat oven to 180°C (160°C fan-forced). Grease a 20cm (base diameter) spring form pan with removable base.

2Reserve 1 teaspoon of the sugar. Whisk eggs and remaining sugar in a bowl until light and creamy. Add milk and oil; whisk until combined. Add apple and strawberry; stir to combine. Sift flours and 1 teaspoon of the cinnamon over egg mixture, returning any husks to the bowl; stir until combined.

3Spoon mixture into prepared pan; level surface. Bake for 40 minutes or until golden and a skewer inserted at centre comes out clean. Cool in pan for 5 minutes. Transfer to a wire rack to cool completely. Sprinkle with combined reserved sugar and remaining cinnamon. Serve with extra strawberries.
