Apple and vanilla sponge pudding
- 2 eggs
- 1/4 cup caster sugar
- 1/2 cup self-raising flour
- 1/2 teaspoon mixed spice
- 400 gram can pie apples
- cream or ice-cream, to serve
Method

1Preheat oven to moderate, 180°C (160° fan-forced). Lightly grease a 5-cup ovenproof dish.

2In a bowl, using an electric mixer, beat eggs until fluffy. Add sugar, 1 tablespoon at a time, beating until thick and creamy.

4Bake 30-35 minutes, or until sponge is cooked when tested with a skewer. Serve warm with a cream or ice-cream, if desired.
Notes
Try making your own stewed apple: Golden Delicious, Royal Gala, Granny Smith and Pink Lady are apple varieties that are good for cooking. Add a little water and sugar to taste, and cook until pulpy.
