Apple, pear and berry cobbler

Ingredients

Cobbler topping
  • 1 1/2 cup (225g) flour
  • 1 tablespoon caster sugar
  • 3茶匙发酵粉
  • 120 gram butter, cubed
  • 3/4 cup (185ml) buttermilk
Apple, pear and berry cobbler
  • 2 apples, peeled, cored, cut into wedges
  • 2 pears, peeled, cored, cut into wedges
  • 300 gram packet frozen mixed berries
  • 1/3 cup (75g) caster sugar
  • 1 tablespoon demerara sugar
  • custard or ice-cream, to serve

Method

Apple, pear and berry cobbler

    Preheat oven to 200°C (180°C fan-forced). Place apple, pear, berries and sugar in a 6-cup ovenproof dish and toss to combine. Bake for 15 minutes.

    Meanwhile, make topping: Place flour, caster sugar and baking powder in a bowl. Rub in butter with fingertips until mixture resembles breadcrumbs. Add buttermilk and mix to combine.

    Dollop spoonfuls of topping roughly over fruit and sprinkle with demerara sugar. Bake for 40-45 minutes, until topping is risen and golden. Set aside for 15 minutes before serving with custard or ice-cream.

Notes

Tip: Leave a little fruit uncovered - it looks more attractive if the filling is visible among the golden topping.
