Apple, pear and vanilla sponge pudding with custard

These one-cup vanilla, apple and pear puddings are deliciously spongey and perfect served with creamy custard.

Ingredients

Apple, pear and vanilla sponge pudding with custard
  • 3 green apples, peeled, cored, chopped into 2cm pieces
  • 3 pears, peeled, cored, chopped into 2cm pieces
  • 2 tablespoon caster sugar, plus 1/2 cup extra
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup self-raising flour
  • 1 teaspoon mixed spice
  • custard or cream, to serve

    Preheat oven to hot, 200°C (180°C fan-forced). Lightly grease 8x3/4-cup ramekins (or 8-cup ovenproof dish).

    Combine apple and pear in dish. Sprinkle with sugar, toss to coat. Bake 35-40 minutes, until tender. Cool. Reduce oven to moderate, 180°C (160°C fan-forced).

    In a bowl, using an electric mixer, beat eggs and vanilla until fluffy. Add extra sugar, 1 tablespoon at a time, beating until thick and creamy and sugar is dissolved.

    Sift flour and spice together over egg mixture. Fold gently through. Pour egg mixture over fruit, spreading to edges of dish.

    Bake 15-20 minutes until sponge is cooked when tested with a skewer. Serve hot with custard or cream.

Notes

Tip: When stewing apples use varieties such as pink lady, granny smith or golden delicious.
