Apple pie ice-cream

Ingredients
Apple pie ice-cream
- 1 litre vanilla ice-cream, softened
- 1 quantity stewed apple
- 100 gram crushed scotch finger biscuits
- 2 tablespoon glace ginger, chopped,
- 1/2 teaspoon mixed spice (optional)
Method
Apple pie ice-cream

1Place ice-cream in a large bowl. Using a large metal spoon, fold apple, biscuits, ginger and spice through ice- cream.

2Spoon into a 10cmx20cm (6-cup) loaf pan. Freeze 4 hours, or overnight, until firm.
Notes
Tip: Use other biscuits of choice, such as ginger or chocolate, or use almond bread.
