Apple pie ice-cream

Incorporate the flavours of your favourite childhood dessert into cool, creamy ice-cream - a hybrid meal at it's finest.

Ingredients

Apple pie ice-cream
  • 1 litre vanilla ice-cream, softened
  • 1 quantity stewed apple
  • 100 gram crushed scotch finger biscuits
  • 2 tablespoon glace ginger, chopped,
  • 1/2 teaspoon mixed spice (optional)

Method

Apple pie ice-cream
  • 1
    Place ice-cream in a large bowl. Using a large metal spoon, fold apple, biscuits, ginger and spice through ice- cream.

    Spoon into a 10cmx20cm (6-cup) loaf pan. Freeze 4 hours, or overnight, until firm.

Notes

Tip: Use other biscuits of choice, such as ginger or chocolate, or use almond bread.
