Apple puffs
These sweet crunchy balls of sweet pastry are stuffed with warm cinnamon apples and sultanas - a delicious surprise with every mouthful!

Ingredients
Apple puffs
- 75 gram unsalted butter
- 500 gram green apples, peeled, cored, chopped
- 1/2 cup (100g) sultanas
- 1/2 cup (110g) caster sugar
- 1 teaspoon finely grated lemon zest
- 2 teaspoon lemon juice
- 1 cinnamon stick
- 5 sheets ready rolled puff pastry
- 1 egg, lightly beaten
- white sugar, for sprinkling

1Preheat oven to 180°C (160°C fan-forced) and line a baking tray with baking paper.

2Melt the butter in a pot over medium heat. Add apples, sultanas, sugar, lemon zest, lemon juice and cinnamon stick. Cover with a lid and cook for 5 minutes, then remove the lid and cook for a further 5 minutes or until the apples are tender, but still holding their shape.

3Remove the cinnamon stick and refrigerate the apple mixture until cool.

4Using a 12cm round cutter. cut 4 rounds from each sheet of pastry. Place a heaped teaspoon of mixture into the centre of each round and brush the edges with beaten egg. Gather the edges and pinch to seal the pastry, then place onto tray seal side down.
