Apple sponge puddings
- 4 medium green-skinned apples (600g)
- 1/4 cup (55g) caster (superfine) sugar
- 1/4 cup (60ml) water
- 1 cinnamon stick
- 2 eggs
- 1 teaspoon vanilla extract
- 1 tablespoon finely grated lemon rind
- 1/4 cup (55g) caster (superfine) sugar, extra
- 1/2 cup (75g) self-raising flour
- 1/3 cup (25g) shredded coconut
- 2 teaspoon icing (confectioners') sugar
Method
Apple sponge puddings

1Preheat oven to 180°C/350°F. Grease four 1-cup (250ml) ovenproof dishes.

2Peel, quarter and core apples. Combine apples, sugar, the water and cinnamon in medium saucepan; cook, covered, about 8 minutes or until apples are tender. Discard cinnamon. Spoon apple into dishes.

3Beat eggs, extract, rind and extra sugar in small bowl with electric mixer until thick and creamy. Transfer to medium bowl; fold in sifted flour and coconut. Spoon sponge mixture over apple. Place dishes on oven tray.

4Bake puddings about 15 minutes or until browned lightly. Stand 5 minutes before serving dusted with sifted icing sugar; accompany with ice-cream, if you like.
