Apricot parfait

Deliciously sweet apricots are layered in a tall glass with fresh strawberries, crumbly biscuit pieces, vanilla custard and flaked almonds.

Ingredients

Apricot parfait
  • 3/4 cup dried apricots, diced
  • 1/2 cup water
  • 1 1/2 cup bought thick vanilla custard
  • 6 sponge finger biscuits (savoiardi), crushed
  • 1/2 teaspoon finely grated orange zest
  • 250克草莓,切碎

Method

    Place apricots and water in a small saucepan. Bring to the boil. Simmer, uncovered, for 5 minutes or until soft. Cool. Process apricot mixture until smooth.

    Combine custard, biscuits and zest in a medium bowl.

    Spoon a little custard mixture into 4 x 1-cup serving glasses. Top with some apricot puree and strawberry. Repeat layers with custard, apricot puree and strawberries. Top with almond flakes. Cover with plastic food wrap; chill for 10 minutes before serving.

Notes

Tip: To crush biscuits, place in a sealable plastic food storage bag. Using a rolling pin or spoon, gently pound biscuits.
