Asian duck salad
This zesty Asian salad is full of spice and packs a punch - served along side some sliced barbequed duck, this makes a divine Summer-time meal.

Ingredients
Asian duck salad
- 1 cup mint leaves
- 1 cup coriander leaves
- 1/2 cup thai basil leaves
- 3 kaffir lime leaves, finely sliced
- 2 lebanese cucumbers, sliced diagonally
- red chilli, sliced
- green onion, sliced
- lime wedges, to serve
- 4 eschalots, finely sliced
- 1/4 cup fresh lime juice
- 1/4 cup grated palm sugar
- 2 tablespoon fish sauce
- 1 tablespoon peanut oil
- 1 barbecued duck, sliced
Method
Asian duck salad

1In a medium bowl, combine eschalots, lime juice, sugar, fish sauce and oil. Set aside 10 minutes, until eschalots become transparent.

2To make salad: In a large bowl, combine herbs, kaffir lime leaves and cucumber. Add eschalot mixture and toss well.

3Arrange duck on serving plate with salad. Top with chilli and green onion. Accompany with lime wedges.
