  • 8 spears asparagus, trimmed, blanched
  • 8 slice sourdough, crusts removed
  • 1/3 cup goat's curd
  • 1/4 cup basil, shredded
  • 4 slice prosciutto, halved lengthways

Method

    Blanch asparagus in boiling water for 30 seconds to 1 minute, depending on thickness. Drain and refresh in iced water.

    Using a rolling pin, flatten bread slices.

    Spread each slice with 2 teaspoons goat's curd and sprinkle with basil. Season to taste.

    Wrap a strip of prosciutto around each asparagus spear, leaving the tip exposed.

    Place across bread slice and roll up to enclose. Secure with toothpicks.
