Asparagus prosciutto rolls
- 8 spears asparagus, trimmed, blanched
- 8 slice sourdough, crusts removed
- 1/3 cup goat's curd
- 1/4 cup basil, shredded
- 4 slice prosciutto, halved lengthways
Method
Asparagus prosciutto rolls

1Blanch asparagus in boiling water for 30 seconds to 1 minute, depending on thickness. Drain and refresh in iced water.

2Using a rolling pin, flatten bread slices.

3Spread each slice with 2 teaspoons goat's curd and sprinkle with basil. Season to taste.

4Wrap a strip of prosciutto around each asparagus spear, leaving the tip exposed.

5Place across bread slice and roll up to enclose. Secure with toothpicks.
