Asparagus with maltaise sauce
  • 2 bunches asparagus, tough ends removed
  • 1 tablespoon orange juice
  • 1 teaspoon orange rind
  • 1 quantity hollandaise sauce

Method

Asparagus with maltaise sauce

    Cook asparagus in a large saucepan of boiling, salted water for 4 minutes, until just tender. Drain. Arrange asparagus on plates.

    Whisk orange juice and half of rind into Hollandaise Sauce. Spoon a little sauce over asparagus and top with remaining rind. Serve remaining sauce separately.
