Asparagus with maltaise sauce
- 2 bunches asparagus, tough ends removed
- 1 tablespoon orange juice
- 1 teaspoon orange rind
- 1 quantity hollandaise sauce
Method
Asparagus with maltaise sauce

1Cook asparagus in a large saucepan of boiling, salted water for 4 minutes, until just tender. Drain. Arrange asparagus on plates.

2Whisk orange juice and half of rind into Hollandaise Sauce. Spoon a little sauce over asparagus and top with remaining rind. Serve remaining sauce separately.
