Asparagus with orange sauce
A zesty, creamy orange sauce is the perfect way to liven up this tasty asparagus side dish

Ingredients
Asparagus with orange sauce
- 3 bunches asparagus, ends trimmed
- 1 teaspoon finely grated orange rind
Orange sauce
- 2 egg yolks
- 125 gram unsalted butter, cut into small cubes
- squeeze of lemon juice
- 1 tablespoon orange juice
Method
Asparagus with orange sauce

1Cook trimmed asparagus in a large saucepan of boiling, salted water for 1-3 minutes, until just tender. Drain well and arrange on serving plates.

2Spoon a small amount over asparagus and top with remaining rind. Serve asparagus with remaining sauce to the side.
Orange sauce

3Place egg yolks and 1 tablespoon water in a heatproof bowl. Place over a saucepan of gently simmering water on low heat and whisk until light and fluffy.

4Gradually add butter, whisking continuously, until sauce is thickened and smooth. Whisk in a little salt and lemon juice to taste and set aside to cool slightly.

5Whisk orange juice and half of rind into still-warm sauce.
Notes
You can make this dish one hour before serving time, then cover and set it aside at room temperature.
