Avocado and artichoke salad
This summery salad is quick, easy and delicious with prawns added for a treat.

Ingredients
Lime and basil vinaigrette
- 1/4 cup (60ml) olive oil
- 1/4 cup (60ml) lime juice
- 1 fresh small red thai chilli, chopped finely
- 1 tablespoon finely shredded fresh basil
- 1/2 teaspoon white sugar
Avocado and artichoke salad
- 1 medium avocado, sliced
- 8 bottled artichoke hearts in oil, drained, quartered
- 2 lebanese cucumbers, sliced thinly
- 1 small mignonette lettuce, torn
Method
Avocado and artichoke salad

1Combine ingredients for lime and basil vinaigrette in screw-top jar; shake well.

2Combine avocado, artichoke and cucumber in medium bowl, add vinaigrette; cover, refrigerate 2 hours.

3Place lettuce in bowl. Serve avocado mixture over lettuce.
