Avocado and artichoke salad

This summery salad is quick, easy and delicious with prawns added for a treat.

Ingredients

Lime and basil vinaigrette
  • 1/4 cup (60ml) olive oil
  • 1/4 cup (60ml) lime juice
  • 1 fresh small red thai chilli, chopped finely
  • 1 tablespoon finely shredded fresh basil
  • 1/2 teaspoon white sugar
Avocado and artichoke salad
  • 1 medium avocado, sliced
  • 8 bottled artichoke hearts in oil, drained, quartered
  • 2 lebanese cucumbers, sliced thinly
  • 1 small mignonette lettuce, torn

Method

    Combine ingredients for lime and basil vinaigrette in screw-top jar; shake well.

    Combine avocado, artichoke and cucumber in medium bowl, add vinaigrette; cover, refrigerate 2 hours.

    Place lettuce in bowl. Serve avocado mixture over lettuce.
