Avocado pide with vine-ripened tomatoes
- 2 ripe avocadoes
- 2 tablespoon lemon juice
- 400 gram loaf pide (turkish bread)
- 1/4 cup virgin olive oil
- 1 clove garlic, crushed
- 3 vine-ripened tomatoes, sliced
Method
Avocado pide with vine-ripened tomatoes

1Mash avocados with lemon juice and set aside. Cut pide in half horizontally. Combine olive oil and garlic and brush over the cut surface of pide. Toast pide, olive oil-side up, under a preheated grill until light golden. Spread mashed avocado over bread then top with sliced tomatoes. Season with salt and freshly ground pepper and garnish with baby basil leaves, if desired. Cut into pieces to serve.
