Ingredients
Baked apples with cinnamon ricotta
- 6 granny smith apples, cored
- 80 gram unsalted butter
- 1/3 cup (55g) sultanas
- 6 cinnamon sticks
- 1/2 cup (125ml) maple syrup
Cinnamon ricotta
- 1 cup (200g) ricotta
- 2 tablespoon thick cream
- 2 teaspoon maple syrup
- 1/4 teaspoon cinnamon
Method
Baked apples with cinnamon ricotta

1Preheat oven to 180°C/160°C fan-forced. Peel tops off apples.

2Mix 50g of butter with sultanas. Push mixture then a cinnamon stick into core of each apple. Place in an ovenproof dish and drizzle over maple syrup. Dot remaining butter on top. Bake for 30 minutes, until golden and tender.

3CINNAMON RICOTTA: Place ingredients in a bowl. Beat until smooth and serve with apples and their juices.
Notes
You can lower the fat content in this dessert by reducing the butter by half and using low-fat ricotta.
