Ingredients
Baked brioche, plum and blueberries
- 2 cup milk
- 4 eggs
- 1/2 cup cream
- 1/3 cup caster sugar
- 1 teaspoon vanilla extract
- 5 slice brioche, quartered
- 400 gram can plums, drained
- 150 gram punnet blueberries
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- vanilla yoghurt, to serve
Method
Baked brioche, plum and blueberries

1Preheat oven to 180°C. Place a 5-cup oval baking dish in a large baking pan.

2In a medium bowl, whisk milk, eggs, cream, sugar and vanilla together until well combined.

3Layer brioche quarters, plums and blueberries in dish. Gradually strain egg mixture over brioche to cover. Sprinkle with cinnamon and nutmeg.

4Add enough boiling water to baking pan to come halfway up the side of the dish. Bake 40-45 minutes, until custard is just set. Serve warm or cold with vanilla yoghurt.
Notes
Thick fruit toast and any other canned fruit can be used.
