Ingredients

Baked chicken macaroni cheese
  • 30 gram butter
  • 1/4 cup flour
  • 1又1/2杯牛奶
  • 1/2 cup grated tasty cheese
  • 1/2 cup grated parmesan
  • 200 gram macaroni, cooked, kept hot
  • 1/2 small barbecue chicken, skin removed, flesh shredded
  • 125 gram can corn kernels, drained
  • 1/2 small red capsicum, seeds removed, chopped
  • 1/3 cup frozen peas, thawed

Method

    Melt butter in a large saucepan on low. Stir in flour and cook 1 minute.

    Remove from heat and whisk in milk until smooth. Return to heat and cook on high, stirring until sauce boils and thickens. Reduce heat to low and simmer 3 minutes. Stir in half of both cheeses until melted and combined. Preheat griller to high.

    Remove from heat and mix in macaroni, chicken, corn, capsicum and peas and season to taste. Pour into a large casserole dish (or 4 small ramekins). Sprinkle with remaining cheese.

    Grill 4-5 minutes or until cheese has melted and is golden brown. Serve with salad.
