Baked gnocchi with spinach and prosciutto

Ingredients
- 625 gram packet gnocchi
- 250 gram mascarpone
- 200 gram prosciutto, cut into strips
- 150 gram baby spinach
- 250 gram cherry tomatoes, halved
- 1/2 cup (40g) grated parmesan
Method

1Cook gnocchi in a large saucepan of boiling, salted water according to packet directions. Drain and transfer to a large greased oven-proof dish.

2Add mascarpone, prosciutto, spinach and tomato. Toss to combine. Season with pepper and top with parmesan.

3Place under a preheated grill, 5 centimetres from heat source, for 4-5 minutes, until cheese melts and top is golden. Serve.
Notes
You can also make this with cooked pasta. Shells work particularly well.
