Baked kumara and cinnamon rösti
  • 1 kumara (500g), grated coarsely
  • 40 gram butter
  • 2 teaspoon ground cinnamon
  • 2 tablespoon finely grated parmesan cheese

Method

    Preheat oven to 180°C (350°F). Line oven trays with baking paper.

    Place kumara in fine sieve; squeeze out excess liquid. Cook kumara, butter and cinnamon in medium saucepan, covered, stirring occasionally, about 5 minutes or until softened. Remove from heat; stir in cheese, season to taste.

    Drop level tablespoons of mixture on trays, about 5cm (2 inches) apart; gently flatten with a fork.

    Bake rösti about 20 minutes or until crisp.
