Banana bran muffins
We all want to find the balance between food that is exciting for the kids to eat and also provides them with the good stuff they need for their health. These muffins are light, soft and yummy, but still have the added health benefit of oat bran hidden in them.

Ingredients
Banana bran muffins
- 125 gram butter, at room temperature
- 1/2 cup (100g) brown sugar
- 3 medium (500g) ripe bananas, mashed
- 1/4 cup (60ml) milk
- 1 teaspoon vanilla extract
- 2 eggs, lightly whisked
- 1又1/2杯(225g) self-raising flour
- 1 teaspoon cinnamon
- 1/2 cup (60g) oat bran
- 1 cup (110g) walnuts, coarsely chopped, toasted
Method

1Preheat oven to 180°C/160°C fan forced. Line a 12-hole (1/3 cup capacity) muffin pan with paper cases.

2Cream butter and sugar in a large bowl. Gradually add banana, milk, vanilla and egg. Stir to combine.

3Fold in combined sifted flour and cinnamon, then the oat bran and a pinch of salt. Stir in the walnuts.

4Divide mixture evenly among paper cases. Bake for 25 minutes or until browned lightly. Muffins are cooked when a skewer inserted into the middle comes out clean.
Notes
Suitable to freeze. Not suitable to microwave.
