Banana bread
If the kids are curling their lips at those overripe bananas that have been sitting in the fruit bowl all week, you can still use them up in this moist and mouthwatering recipe that the little darlings will love!

Ingredients
Banana bread
- 3/4 cup brown sugar
- 60 gram reduced-fat butter or spread
- 1 egg, lightly beaten
- 2 ripe bananas, peeled, mashed
- 2 cup self-raising flour, sifted
- 1/2 cup shape milk strawberries to serve
Method

1Preheat oven to moderate, 180°C. Lightly grease a 14 x 21cm loaf pan and line base and sides with baking paper.

2In a medium bowl, using an electric mixer, beat sugar and butter together until light and fluffy. Beat in egg.

3Stir in banana. Lightly fold in flour alternately with milk.

4Spoon mixture into prepared pan. Bake for 1 1/2 hours, or until cooked when tested with a skewer. Cool on a wire rack. Serve with strawberries.
Notes
