Banana cupcakes with maple cream frosting
- 60 gram butter, softened
- 60 gram cream cheese, softened
- 2 eggs
- 1/2 cup (125 millilitres) milk
- 2 tablespoon maple syrup
- 1 1/2 cup (225 grams) self-raising flour
- 1/2 teaspoon bicarbonate of soda
- 2 (400 grams), halved lengthways, sliced thinly
- 30 gram butter, softened
- 80 gram cream cheese, softened
- 2 tablespoon maple syrup
- 1 1/2 cup (240 grams) icing sugar
Method

1Preheat oven to 180°C. Line 12-hole (80 millilitres) muffin pan with paper cases.

2In a medium bowl, beat butter, cream cheese and sugar with electric mixer until light and fluffy. Beat in eggs, one at a time. Stir in milk, syrup and sifted dry ingredients; fold in bananas. Drop ¼ cup of mixture into each paper case.

3Bake cupcakes about 30 minutes. Stand cupcakes in pan 5 minutes before turning, top-side up, onto wire rack to cool.

4Meanwhile, make maple cream frosting.

5Spread cupcakes with frosting.

6In a small bowl, beat butter, cream cheese and syrup with electric mixer until light and fluffy; beat in sifted icing sugar, in two batches, until combined.
