Ingredients
Banana jam
- 1.5 kilogram (3 pounds) barely-ripe bananas, chopped coarsely
- 1/3 cup (80ml) lime juice
- 1/2 teaspoon ground cinnamon
- 1/2 cup (125ml) water
- 1 vanilla bean
- 4 cup (880g) white (granulated) sugar
Method
Banana jam

1Combine banana, juice, cinnamon and the water in large saucepan; split vanilla bean in half lengthways, scrape seeds into pan, discard pod. Bring to the boil; boil, covered, about 10 minutes or until banana is soft.

2Add sugar; stir over high heat, without boiling, until sugar dissolves. Bring to the boil; boil, uncovered, about 20 minutes or until jam gels when tested.

3Pour hot jam into hot sterilised jars; seal immediately. Label and date jars when cold.
